-Delhi : In an era where culinary trends come and go, Swaad Sutra stands as a beacon of timelessness, offering a vibrant celebration of flavors, memories, and rich heritage. This festival, held at the Radisson Blu Hotel New Delhi Paschim Vihar, is a heartfelt tribute to the diverse cuisines of Punjab, Haryana, and Rajasthan. It invites guests on a gastronomic journey that dives deep into the essence of North Indian culture.
The initiative was born from a collective passion to revive and highlight forgotten recipes and age-old cooking traditions. As Mr. Anuj Soin, General Manager of Radisson Blu, eloquently puts it, “We wanted to create something that doesn’t just serve food, but tells a story. Swaad Sutra is about celebrating cultures, connecting generations, and providing our guests with an experience that feels both new and nostalgic.”
The name “Swaad Sutra,” which translates to “The Taste Thread,” symbolizes the intricate connections among different regional kitchens, all unified by a common heartbeat of hospitality and tradition. The festival draws inspiration from the lush mustard fields of Punjab, the fertile farms of Haryana, and the regal courts of Rajasthan, presenting an array of bold, rustic, and luxurious flavors on a single plate.
Guests can look forward to a delightful array of dishes, including Punjab’s buttery Batinda Chicken and smoky Besan Masala Roti, Haryana’s nutritious Bajra Khichdi and tangy Rajma Rasmisa, and Rajasthan’s iconic Mohan Maas, Ker Sangri, and Dal Baati Churma. Each dish shines as a love letter to its region, with Chef Sanjeev Kumar Nandi, the culinary mastermind behind the festival, asserting, “Cooking these dishes is like telling a story without words — every spice, every simmer has a history, and every bite has a memory.”

Running from today to September 7, 2025, at Level 2, Swaad Sutra also features a special Blogger Table, inviting food enthusiasts to delve into the heartland of North India in the most delectable manner. At its core, Swaad Sutra is a festival that nurtures not just the body but the soul, providing an unforgettable experience that echoes the tradition and hospitality of North Indian cuisine.
